Krasnodar, 18 December – Yug Times. Irina Dolgova, Catering BUREAU Director, relates the trends in the catering sphere, strategies for business development and their mainstreams.
Q.: Currently, your company tops the [catering] market in the southern Russian regions. But how did it all begin?
A.: It began not long ago. In 2005, a need to organise the food for the participants and guests of the Krasnodar EXPO Exhibition Centre appeared. Then, I worked as the Exhibition Centre Deputy Director, and my life was fully developed to strategic issues and finances. The new project became the starting point in the organisation of Catering BUREAU - and, as you can see it, the main business hobby in my life.
Q.: How is the catering market changing? Is anything new appearing in the customers’ demands?
A.: The market is becoming more and more professional and diversified. Only strong players with good material and technical resources and an experienced personnel can survive. Now the customer is more budgetsensitive, and he nearly always understands what he wants. This is why, the visual component of a dish, its aesthetics has become a very important factor and in fact a focal point.
Q.: Who is involved in the development of the menu and the design for events?
A.: We have five chefs, each in charge of a sector of their own. And there are four such sectors: corporate, spa and resort, event, and restaurant.
Q.: How do you work on the aesthetic components of the events?
A.: Sometimes it may be spontaneous, however we are always in the know of the latest developments of European and world’s catering, and we adapt them for the market of Krasnodar, Sochi or Russia, reacting to our customers’ wishes and seasonality.
Q.: What is necessary to organise an event? How much time is needed for the preparation?
A.: What is needed first of all is a team that has to get involved in the work from the moment when the customer’s order arrives. The minimum number of the staff is from five to eight people, including the sales, the warehouse, and other departments. The maximum staff is unlimited. For instance, we had a 400-strong team working for the 2017 World Skills competition. The minimum time needed to prepare an event is about 24 hours.
Q.: Which project do you remember most of all?
A.: Of course, it was the 2018 International Economic Forum in St. Petersburg. It was an absolutely unique project in terms of organisation, holding, and responsibility. Still, due to the teamwork, acquired skills and technologies, we did not undergo any horrible stress or extreme emotion - all processes worked smoothly. We got most cheerful feedback during the event and afterwards.
